Boondi Raita(Soaked Gram Flour Pearls in Seasoned Yogurt)

Boondi Raita is the ultimate accompaniment for most Indian Rice dishes as well as Breads.It comprises of Boondi – which are small,crispy Gram Flour Pearls readily available in the market at a reasonable price.You can make Boondi at home as well to add a  Homemade “feeling” to the Raita by making a Gram Flour Batter and spooning it through a perforated ladle.

Preparation Time – 10 minutes

Makes – 3-4 Servings

INGREDIENTS

1 cup Boondi – store bought or home made

1 1/2 cups thick Yogurt

1 Onion – finely chopped

Salt to taste

1 tsp sugar

1 tsp pepper powder

Chaat Masala(optional)

1/4 cup coriander leaves – chopped

METHOD

Whisk the yogurt in a bowl with salt,sugar and pepper.Add Chaat Masala if required.Add the Boondi and half the Coriander Leaves.Mix very well.Garnish with the remaining Coriander Leaves.Serve within 30 minutes of preparing.
