Bottle Gourd Pudding (Lauki/Doodhi Kheer)

This pudding is ultimate.Its one of the best desserts even made at festival times which can be had and one of the easiest to make.This is delicious both hot and cold.Today I chanced to crave for this delicious dessert and thought to share with all of you!

You can make this Kheer plain as I did or add dry fruits and nuts as an extra delight!

Preparation Time – 45 minutes-1 hour

Makes – 4-5 servings

INGREDIENTS

1 small Bottle Gourd

3/4 liter milk

Sugar to taste

1 tsp Cardamom Powder

1 tsp oil

Dry fruits/nuts(optional)

METHOD

Peel and grate the Bottle Gourd through a grater or in a food processor.Heat the 1 tsp oil in a non stick pan and add the grated gourd.Fry for 1-2 minutes and add the milk.

The grated Gourd(I grated it manually through a very fine holed grater to get an almost mashed consistency!

Now on very low heat,cook the Kheer till the milk reduces to half its original quantity and the gourd becomes soft,cooked and juicy.

After adding milk to the fried Gourd!

If adding the nuts,fry them in a tsp of ghee and pour over the kheer.

Add the Cardamom Powder and mix well.

Serve warm or cold as per your taste.Real Yum!
