Christmas Spiced Plum Cake

This is the ultimate Christmas Cake and is one of the best cakes which can be kept for years!It is flavorful and moist and with a lovely aroma of rum and candied fruits.Check the recipe out:-

Preparation Time – 1 hour

Makes – 1 6 inch Spiced Plum Cake

INGREDIENTS

1 cup all-purpose flour(maida)

2 cups glace cherries

1 cup raisins

1 cup sultanas

1 1/2 cups candied fruit peel

2 cups dark rum

2 cups dark Muscovado sugar

1/2 cup butter

2 eggs

1/2 tsp baking powder

1/8 tsp baking soda

1/4 tsp ground cinnamon

2 tsp ground allspice(available in special stores) – optional

1 cup assorted nuts – walnuts,pecans,cashewnuts and almonds

1 tsp salt

1/2 cup milk

METHOD

NOTE – Soak the glace cherries,raisins,sultanas and candied peel in 1 1/2 cups rum for 2 months in a covered glass container occasionally stirring it for good amalgamation.

Preheat oven to 325 deg F(165 deg C)

Sift flour with salt,allspice,baking powder,baking soda and cinnamon powder thrice.

Beat butter and sugar till creamy.Add eggs and continue beating till smooth.Add the seasoned flour and fold into the butter-sugar mix.Add the milk and mix well.Now add the nuts and the rum-soaked fruit and fold into the batter until everything is nicely mixed.

Grease a 6 inch pan with butter and layer it with wax/parchment paper.Sprinkle some flour at the bottom and sides of the pan.Spoon the cake mix into the pan and bake for 40-45 minutes till a skewer inserted into the center of the cake comes out clean.

Allow the cake to cool for 10 minutes and take it out.Drizzle 1-2 tsp rum from the remaining 1/2 cup of rum over the cake everyday till eating time.

Age this cake preferably for 10 -12 weeks,though it tastes superb immediately as well.
