Doughnuts are yeast dough shaped oblongs like the South Indian Medu Vada but with an International Twist.This recipe is by far the best recipe I have come across!

Preparation Time – 3 hours(Includes Proving Time)

Makes 24 doughnuts

1 cup sugar (approx)

1/2 cup warm water

2 tsp active dry yeast

2 tbsp vegetable oil

Oil for frying

4 1/2 cups all purpose flour

3/4 tsp salt

3/4 tsp ground Cinnamon

1 cup water approx

For the glaze:

1 cup powdered sugar

2 tbsp milk

2 tbsp maple syrup

Method

Dissolve 2 tsp sugar and yeast in warm water and keep aside till frothy.Seive both flours and cinnamon in a big bowl and make a well in the center.Add oil and sufficient water to moisten the flour.Add the yeast mix and start to knead.Working with your hands knead into a sticky dough.Add 2 tbsp oil and knead again till smooth and elastic.Keep to prove for 1 1/2 hours covered with a moist cloth.

Meanwhile make the glaze.Mix powdered sugar with milk and maple syrup and beat well with a spoon till thick.

Heat oil in a pan on medium heat.Sprinkle some flour over a work surface and shape the dough into rounds.Cut a hole in the middle with a bottle cork or a medicine measure cup.(I used a clean cough syrup cup).Fry the doughnuts till golden brown.

With a fork poke holes on both the sides to absorb the glaze.Brush the doughnuts with the glaze and leave to set and get cool.Serve with tea or Coffee.
