This recipe is adapted from ISCKON Feasts where they serve super-delicious food – no onion and no garlic with only fresh ingredients.This combination would be termed as “deadly” and “revolting” by many but believe me…this is very delicious,healthy and can be counted as a diet food – for people wanting to lose weight and for people who love to adopt a healthy lifestyle.
Preparation Time – 40 minutes
Makes – 2 servings
INGREDIENTS
1 medium eggplant – cubed
2 cups Spinach – chopped
2 Tomatoes – diced
2 tsp Oil
1 tsp Coriander Powder(dhania)
1 tsp Cumin Seeds(jeera)
1 tsp Garam Masala
1/2 tsp Asafoetida
2 tbsp water
Salt to taste
2 tsp Sugar
METHOD
Heat oil and add Cumin Seeds,Asafoetida and Coriander Powder.When the seeds crackle,add the Eggplant and stir.Add the water and cover to cook till the Eggplant releases its seeds.Add Spinach and Tomatoes and stir briefly.Add salt,sugar and Garam Masala and cover and cook till everything forms a wonderful paste-like consistency.
Remove and serve with plain rice or hot phulkas.
