Fruit Salad Mangolicious

In the hot summers when the water content evaporates faster from our body,we crave food and that leads to binge snacking which is harmful for health and promotes obesity.No one wants to look bulky in summers and everyone wants to stay cool and fresh!This salad is the quick fix for the same.Make it with whatever seasonal and other fruits you have on hand plus it contains the favourite summer fruit – Mango which will give you additional happiness!Its a guaranteed healthy indulgence.This can also be served as a summer dessert!

Preparation Time – 15-20 minutes

Makes – 3-4 servings

INGREDIENTS

The Fruit Collection:

1 juicy Apple – diced

1-2 Bananas – sliced

1 Orange – segmented

1 cup Grapes – whole or halved

1/2 cup Cherry Tomatoes

1/2 cup Kiwi – skin removed and diced

1/2 cup chopped fresh Pineapple – diced

2-3 diced Cabbage leaves per bowl of Salad(optional)

1-2 Lettuce leaves per bowl

Other seasonal fruits can be added – whatever you have at hand

For the dressing:

2 tbsp ripe Mango Pulp

1 tbsp yogurt

1 tbsp milk

A pinch of salt

For the Garnish:

4 tbsp Pomegranate pearls

1 tbsp chopped Walnuts(optional)

METHOD

For the dressing:

Mix all the ingredients in a small bowl and whisk well to combine.Keep aside.

For the salad:

Mix all the fruits except Cabbage leaves in a big bowl.Add the dressing and toss well to coat each piece of fruit.Layer salad bowls or plates with the Lettuce leaves.Spoon a generous helping of the fruits tossed in dressing on the leaves.Sprinkle Pomegranate pearls and chopped Walnuts on top.

Either serve at room temperature or chilled if desired!
