Green Pea Soup

Rains come to quench the thirst of the parched earth and retain the greenery of the earth.So during the monsoon times the air is cool and the body craves for comfort food!In my opinion comfort food comes in a bowl and may be sweet or salty as you wish.I will be sharing many recipes of comfort food in the future posts but this is one of my favourites!Made from fresh or frozen green peas with a rich flavouring and cream to add to the richness this is a perfect option for a rainy day or a cold winter day when you do not feel like going out and love keeping to yourself.It fills your tummy and keeps you full for a long time saving that occasional dash to the kitchen and looking for something satisfying!

Make the croutons before hand and store them in an airtight container a day before making the soup.You can also freeze them and give them a quick toast in the oven.Check out the soup below!I am sure you will thank me for it!

Preparation Time : 1 hour

Makes : 3 – 4 servings

INGREDIENTS

2 cups fresh/frozen green peas

2 medium Onions – sliced

2 cloves Garlic – chopped

1 tsp Ginger Garlic paste (optional)

1 Bay Leaf

2 tbsp butter

2 tsp salt

1 tbsp Cornflour

1 1/2 tsp pepper

1/2 liter water

2 tbsp cream

Coriander leaves to garnish

METHOD

Heat butter in a pan and add the bay leaf.Saute till fragrant and add the Ginger Garlic paste and sliced Onions.Saute till transparent and add the peas.Stir for 2 – 3 minutes  and add the water.Bring to a boil till peas are cooked.Leave to come to room temperature and puree in a blender.

Strain the liquid through a soup strainer into a different saucepan.Mix 1/4 cup of the liquid with the cornflour and keep aside.Bring the rest of the liquid to a boil and add the salt and pepper.Add the cornflour slurry and cook on medium heat till thick.Mix well and taste to adjust the seasoning.Take off heat and add 1 tbsp of the cream.

Ladle the soup into bowls and drizzle the top with the remaining cream.Serve garnished with Coriander leaves.

Italian herbs can be added to spice up the soup.However it tastes best with salt and pepper!
