Macaroni with Garlic Chives and Herbs

The Italian palette is a favourite in India with its lovely citrusy and sensational flavours and tastes.Having a kitchen garden with lovely herbs is in itself a blessing in the sense that whenever you need fresh herbs you always have them at hand.

This recipe involves fresh Garlic chives which are generally available in winters but can be easily home grown by planting a bulb of Garlic in a pot filled with compost and fertilised with fish manure.Watering everyday will enable the chives to sprout in 15-20 days.

This recipe involves Macaroni pasta and goes very well with crusty buttered toast.Cheese toast also goes very well.This can also be made with other varieties of pasta as well.

Preparation Time – 30-45 minutes

Makes – 3-4 servings


2 cups Macaroni /any other pasta(boiled till Al Dente in salt water)

Boiled Macaroni Pasta

1 1/2 cups Garlic Chives – chopped

1 Tomato – diced

1 big Onion – chopped

1 tbsp Pasta seasoning(available in supermarkets or online)

3 tbsp Extra Virgin Olive Oil

Salt as per requirement


Heat 2 tbsp of the Oil in a pan and add the chopped Onion.Saute till translucent and add the Tomato.Saute till the Tomato is soft and add the Chives.Add 1 tsp salt(more if required) as the pasta has already been boiled in salted water.Sate for 2-3 minutes.

Now add the Pasta and toss well to amalgamate.Add the seasoning and the rest of the 1 tbsp Oil.Mix gently.Check for salt here and if required add very carefully.

Remove to a bowl and serve hot with Tomato Ketchup and Crusty buttered bread.Cheese toast is also a very good option!
