Quesadillas with Baked Beans and Tomato Salsa

This is a Mexican Delight.Can be had as a snack,for lunch or dinner or even for an informal party.This dish is signature because of the tangy flavor of the Salsa with the beans as well as the bubbling cheese combined into a Tortilla.A must have for all!

Now..for me Quesadilla is all out of tins.Especially for the fact that getting fresh ingredients in India is quite difficult and canned ingredients are just the same as fresh.Like for example take the can of baked beans – in Tomato Sauce they absorb the tang and become very pliable in the Tortilla.They mold according to the ingredients added,especially to the Salsa.

Preparation Time -30 minutes

Makes – 4 Quesadillas

INGREDIENTS

4 Mexican Tortillas(Ready available in markets)

1 can Baked Beans in Tomato Sauce

1 tbsp Salsa(ready available)

4 tbsp Extra Virgin Olive Oil

2 tsp Salt

2 tsp Pepper

1 tsp Garam Masala(for an Indian Kick)

1 cup Mozzarella Cheese – finely grated

METHOD

Empty the can of baked beans in a saucepan and warm over medium heat.Add salt,pepper and Garam Masala.Stir well.Add the Salsa and 1 tbsp of the grated cheese.Stir well to incorporate.

Heat a griddle(tava) on medium heat and warm the Tortillas so that they become soft and flexible.Line each Tortilla with  1 tbsp of the Cheese and spoon 2 tbsp of the beans filling.Fold over to close.Now you can cook according to the following choices:

1.Heat 1 tbsp Oil per Quesadilla and brown each one on medium heat till golden brown and the cheese melted and bubbly.

2.Place each Quesadilla in a Sandwich Maker and grill till done.

3.Bake in a preheated oven (heated 375 DegF) for 10-12 minutes till done.

4.BBQ them if you like.Very delicious!
