Roasted Tomato and Carrot Soup

MY LAST POST IN YEAR 2017

This is both a Winter Soup as well as a great Christmas Dinner option!It contains a whole lot of healthy nutrients,plus warming agents and lip smacking goodness of vegetables like Carrot and Tomato which means the body is getting nourished as well as you are going to get super warm during chilly winter days when the sun is just a distant yellow blob in the sky!

The colour of this soup is super enchanting!Perfect for memorable Winter times with Christmas cheer too!Season’s Greetings!

Preparation Time : 1 hour (including roasting time)

Makes : 2 servings

INGREDIENTS

5 medium Tomatoes – halved

4 Garlic Cloves

1 cup red Carrots – peeled and chopped roughly

2 tbsp Olive Oil

2 Big Onions – chopped

1 tbsp Celery/Coriander Leaves – finely chopped

3 cups water

Salt and Pepper to taste

2 tbsp cream (optional)

2 tsp Italian seasoning

Croutons for garnishing

METHOD

Preheat oven to 180°C.

Arrange Tomatoes,Carrots,Onions and Garlic Cloves on a roasting tray and drizzle evenly with 1 tbsp Olive Oil.

The vegetables on the roasting tray before going into the oven…

Roast for 20 minutes till the vegetables are a little shrivelled up and Garlic cloves are cooked.Remove from the oven and leave to cool to room temperature.

After roasting….

Add the roasted vegetables in a blender along with the water and blend to a fine puree.Heat the remaining 1 tbsp Oil in a saucepan and add the prepared soup puree.Bring to a boil and add salt and pepper.Check the seasoning and add the cream if using.Mix well.

Take out in soup bowls and garnish with Celery/Coriander leaves,1 tsp Italian Seasoning per bowl and croutons.Sere hot!

Serving the Soup….
