Rose flavoured Nankhatai with candied Rose Petals

I had posted the recipe of Nankhatai a couple of years back.That was a plain,Cardamon flavoured recipe with a delicious melt in the mouth texture.This is a new and innovative recipe which requires no extra preparation except you make candied Rose petals at home with absolutely no extra effort.I had posted the recipe for Candied Rose Petals in the post before this.Here is the link for the same :

Candied Rose Petals (Eggless)

This week being Valentine Week and the theme for the 131st FoodieMondayBloghop was Valentine Rose with Rose themed recipes.So I decided to make Nankhatai with the candied Rose Petals.

You can use Vanaspati instead of ghee but you will not get the same taste like what ghee lends to the Nankhatai!I used Cow Ghee for more benefits!

Preparation Time : 30 minutes

Makes : 12 – 14 Nankhatai

INGREDIENTS

1 cup all purpose flour (maida)

1/2 cup powdered sugar

1 cup ghee/vanaspati

A pinch of salt

3 tbsp Candied Rose Petals (See recipe link above)

1/2 tsp baking soda

3- 4 drops Rose Essence

3 – 4 Green Cardamom (Choti Elaichi)

METHOD

Preheat oven to 190°C.

Peel the Cardamom pods and take out the black seeds.Add them with the sugar in a Coffee grinder and blitz to make a fine Cardamom scented sugar powder.

Add the ghee and sugar in a bowl and cream with a hand blender till pale and fluffy.Add the essence and Candied Rose Petals.Sift the flour and baking soda into this mixture and bind with hands till everything comes together.

Divide the mixture into small balls and place on a cookie sheet or baking tray lined with Parchment Paper.Bake till the surface forms cracks.As soon as the cracks form remove from the oven.

The Nankhatai would be very delicate at this stage so with the help of a pancake turner or a flat spatula transfer them to a cooling rack.

Cool to room temperature by which they would have become firm and with a melt in the mouth texture!

Store in airtight containers and serve with love to your sweetheart!
