Sabudana(Sago) Khichdi

Sabudana(Sago) Khichdi is one of the most tasty,tummy filling and easy recipes which are loved by almost everyone provided the recipe is followed to precision.I had posted a version of Sabudana Khichdi before but was not satisfied with the result.Now having cracked the recipe I want to share the intricacies that go into making the tastiest plate of Khichdi – soft grains,cooked to perfection and each grain separate.

To make the recipe there are certain points which are to be remembered:

1.When soaking the Sago grains,its important that we soak the grains just to soak them.Do not soak them in lots of water as this will make them mashed and they will stick to each other while cooking.

2.Add the powdered peanuts along with the sabudana to the cooking pot OR mix the peanuts with the sabudana before adding to the pot.

3.The water will dry out in 30-45 minutes thereafter keep sprinkling water on the sabudana.

4.Keep the heat on medium while cooking.

5.Use an odorless oil like blended edible oils or pure ghee.

Now lets make the lipsmacking recipe:

Preparation Time – 3 hours(includes soaking time)

Makes – 3-4 servings

INGREDIENTS

2 cups sabudana(sago) – soaked till just immersed in water for 2 hours,washed till all the starch rinses out and drained in a sieve

1 cup peanuts – dry roasted,skins removed and powdered coarsely

1 1/2 tsp salt

1 tsp powdered sugar

2 medium Potatoes – peeled and cubed

2 tbsp oil

1 tsp Cumin seeds(jeera)

5-6 curry leaves

2 green chilies – minced

2 tbsp chopped coriander leaves

2 dried red chilies

METHOD

Heat oil in a pan on medium heat and add the cumin seeds and red chilies.Once the seeds crackle add the cubed potatoes and a pinch of salt.Cover the pan and cook the potatoes till fork tender.

Add the curry leaves and green chilies and fry till the chilies turn light green.At this stage you can do either of the two things:

1.Add the soaked sabudana and powdered peanuts one after the other to the pan and mix well.

2.Mix the sabudana and powdered peanuts together in a bowl till nicely amalgamated.Add to the pan and mix well.

Now add the salt and sugar and mix well to incorporate.Keep stirring so that the grains do not stick.

Cook for 10-12 minutes till all the flavors combine.Sprinkle the coriander leaves on top.

Serve hot !
