Sambar Masala

A fail proof Sambar Masala which gives you excellent taste and aroma!Add 1 tbsp to the Sambar when you boil the vegetables in the Tamarind water!I am sharing the Masala made by my grandma!This is a sure hit!

Preparation Time : 30 minutes

Makes – Approximately 350 – 400 gms Masala

INGREDIENTS

1 cup dried red chillies

1 cup Coriander Seeds (dhaniya)

1/2 cup split pigeon pea lentils (Tur Dal)

1/4 cup split yellow lentils (Chana Dal)

1/4 cup split white lentils (urad dal)

2 tsp whole peppercorns (kalimirch)

2 tsp Cumin Powder (jeera)

2 tsp Fenugreek Seeds (methi dana)

1/4 cup curry leaves

1 tbsp Asafoetida

2 tsp Turmeric

METHOD

In this recipe there is no Oil used!We just need to dry roast all the ingredients in a hot pan.Individually dry roast each ingredient and keep taking it out on a plate to cool.You can take out all the ingredients on one big plate and powder together later.Always use medium heat so that each ingredient is perfectly roasted.Roast in the following order :

  1. Dried Red Chillies
  2. Coriander Seeds
  3. Tur Dal and Chana Dal
  4. Urad Dal
  5. Pepper and Jeera
  6. Fenugreek Seeds
  7. Asafoetida and Curry Leaves

Cool to room temperature and powder finely after adding the turmeric powder.You can also mix it into the Masala separately.Store in an airtight container!
