Spaghetti with Pesto Sauce

This post uses it in a delicious Pasta recipe which will keep you wanting more of it!Made with Olive Oil and Durum Wheat Spaghetti,it is a very nutritious option for a carbohydrate filler in the body.However there are various recipes and some of them call for piling the Pesto sauce on top of the Pasta.I have a slightly different recipe here but there are a few general things which are common:

1.Any kind of Pasta can be used including Gnocchi(pasta made with Potatoes) – I have used Spaghetti as in my opinion it goes best with Pesto.

2.Extra Virgin Olive Oil is the best option as it lends its flavor to the Pasta.

3.Garlic is optional to add so it can be left out if required.

4.Tomatoes are used to add a tang to the recipe as they let out their pulp and mix with the rest of the ingredients but again,those are optional.

5.I have sauteed the Pasta with the Pesto in the pan.You can suit yourself and pour the Pesto mix over the Pasta if required.

6.Parmesan Cheese is usually grated on top of the Pasta,but if you do not have it or are diet conscious,then you could omit that or use any cheese you have.Parmesan tastes best no doubt.

Preparation Time – 45 minutes

Makes – 3-4 servings.

INGREDIENTS

1 standard pack Spaghetti/any other Pasta

1/2 cup Pesto sauce

5-6 Garlic Cloves – chopped(optional)

2 Medium/1 big Onion – sliced

2 medium/1 big Tomato – sliced

Salt to taste

1 tsp pepper powder

2 tbsp Extra Virgin Olive Oil

1/4 cup Parmesan Cheese – grated(optional)

METHOD

Boil the Pasta in plenty of salted water to which some Oilive Oil has been added according to instructions on the pack till al dente.Once done strain and toss with 1 tbsp Olive Oil.

Heat the remaining 1 tbsp Oil and fry the Garlic till light brown.

Add the sliced Onions and saute till translucent.Add the sliced Tomatoes keeping 3-4 slices for garnishing.

When the Tomatoes are soft,add the Pesto Sauce and mix well.Add 1 tbsp of the Parmesan Cheese now and mix.

Now add the Pasta and mix very well to coat.

Remove to a pasta bowl/plate and sprinkle with the rest of the grated Cheese and serve hot.
