I chose something really healthy which would justify the process of steaming.Something gluten free and which was delicious at the same time.A friend complained about having Irritable Bowel Syndrome and Gluten Intolerance due to which she was unable to eat wheat.I normally bake cakes for this family with Almond Flour as almost everyone in the family has it.But what about savouries which are mostly gluten based?
This snack combines vegetables in the best way possible.Here is how :
- Non starchy veggies are peeled thin to resemble pasta and steamed.
- Colocasia/Potatoes are steamed and pureed with delicious ingredients to make a sauce.
- Both are combined to make an awesome gluten free pasta!
- The topping is a combination of Pasta seasoning and mozzarella cheese
This recipe can be used for fasts without the pasta seasoning as well as for a quick health snack when you are wanting to lose weight.
Preparation Time – 1 hour
Makes : 2 servings
The vegetables :
100 gms Red Pumpkin
100 gms Bottle Gourd (Lauki/Doodhi)
1 tbsp butter
1/2 tsp salt
1/4 tsp pepper powder
The sauce :
100 gms Colocasia
1 cup milk
1/2 cup water
1 tsp salt
1 tsp pepper powder
1 tsp Nutmeg Powder
2 – 3 Basil leaves (tulsi) – optional
2 – 3 Mint Leaves (pudina) – optional
2 tsp Pasta seasoning
1 tbsp grated Mozzarella cheese
Make the sauce :
Steam the Colocasia for 15 minutes and peel.Combine milk,water,salt,pepper and Nutmeg Powders in a blender.Strain into a pan and heat for 1 – 2 minutes.Keep aside.
Steam the vegetables :
Peel the vegetables and again use the peeler to make very thin pasta shaped strips for the vegetables.Steam for 7 – 8 minutes till soft but the vegetables should hold their shape.
Make the pasta :
Heat butter in a pan and toss the steamed vegetables.sprinkle salt and pepper powder.
Spoon on to a plate and Pour the sauce on top.Garnish with Pasta seasoning,Basil and Mint Leaves and grated cheese.Serve hot.
