The vegetarians among us feel deprived sometimes when we see the meat eaters on the planet gorge of succulent kebabs and seekh and feel if only they had an option to enjoy the same in vegetarian options.This is a delicious vegetarian seekh without Onion and Garlic.You can serve it with Green Coriander and Mint Chutney,Onion rings seasoned with salt and lemon juice or Tamarind Chutney!
You can add other vegetables like Yam,corn,paneer or tofu to this kebab.This recipe only uses 2 tsp Oil.

I have adapted this from a Sanjeev Kapoor’s recipe.
Preparation Time : 1 hour
Makes : 8 – 10 Kebabs
The vegetables :
3 medium Potatoes – grated
1 medium Carrot – grated
1/2 cup Cauliflower florets – grated
1/2 cup French Beans – very finely chopped
1/4 cup peas (fresh/frozen)_- If fresh then boiled in salted water for 10 minutes and coarsely crushed.If frozen then thawed and coarsely crushed
The Spices :
1 tsp Black Cumin seeds (Shahi Jeera)
1 tsp Turmeric Powder (Haldi)
2 tsp Kashmiri Red Chilli Powder
2 tsp Coriander Powder (Dhania)
1 tsp Cardamom Powder (Elaichi)
1 tsp Garam Masala
Other ingredients :
2 tsp Oil
3 tbsp Cashewnut Powder (for the Shahi kick)
3 tbsp roasted Chana powder/roasted Besan (dry roast on a hot fry pan)
8 – 10 wooden Bamboo skewers/satay sticks – soaked in water for 1 hour
Take all the grated and chopped vegetables in a large bowl.Heat 1 tsp Oil in a non stick pan and add all the vegetables,salt and turmeric powder.Cover the pan and cook for 10 – 12 minutes.
Open the pan and add the rest of the spices and mix well.Allow any moisture to evaporate and add the cashew nut powder.Mix well.Cool to room temperature.
Preheat oven to 220°C and spread a baking sheet with the remaining 1 tsp Oil.
Now mix the roasted chana dal powder/besan into the vegetables.Roll into cylindrical seekh kebabs around the bamboo skewers and place them on the prepared tray.Bake for 8 – 10 minutes till golden brown.
Serve with chutney and seasoned Onion Rings.
