Two-minute stir fry subzi(An instant side with any Indian bread)

This recipe was posted as an entrant for the 2 minute Snackosaurus contest held by the prestigious Foodie group – Chef at Large on Facebook.The contest was organised by the group’s dynamic leader – Sid Khullar!

These days everyone craves for “Instant” items on the menu!Instant Coffee,fast food,ready to eat mixes – name it you have it there!But here I am posting an instant subzi – a vegetable side dish enjoyed with any Indian bread like Naan.Roti,Parantha,Kulcha or Poori.

The subzi here is made using fresh vegetables and Paneer – the Indian version of Cottage Cheese.Crunchy vegetables combine with soft,juicy and delicious cubes of Paneer simmered in a creamy sauce made in Two minutes – yes 2 minutes.Added spices lend their delicious flavour to the recipe!

Preparation Time – 2 minutes

Makes – 2-3 servings

NOTE – The 2 minutes is the cooking time for the recipe provided you have made all the preparations beforehand!

INGREDIENTS

400 gms fresh Paneer (Cottage Cheese) – cut into strips

1 medium Green Capsicum – cut into strips

2 medium Onions – sliced

2 medium Tomatoes – cut into strips or diced

2 tbsp Oil

1 tsp Cumin seeds(jeera)

1 dried red Chili

2 Green Chilies – minced

1/2 tsp Kashmiri Chili Powder

1/2 tsp Turmeric Powder(Haldi)

1/2 tsp dry Mango Powder(Amchur)

Salt to taste

3 tbsp fresh/store bought cream

1 tsp Garam Masala

1 tbsp chopped Coriander Leaves

METHOD

Heat the Oil in a non stick pan and add the Cumin seeds and dried red Chili.When they change color,add the minced Green Chili and sliced Onions and sauté till translucent.

Now add the Kashmiri chili,turmeric and dry Mango powders and mix well.Add Capsicum strips and stir for 1/2 a minute.

Add the Paneer and toss to mix very well.

Add the Tomatoes and salt.Cover and cook for another 1/2 a minute.

Reduce the heat to the lowest and now add the cream and Garam Masala.

Mix well to amalgamate and cook for 30 -35 seconds.

Take off heat,sprinkle Coriander Leaves and serve hot!
