In the blazing Indian summer we put the mandatory tea and coffee aside and opt for coolers to soothe our minds and kick our stresses away!I am a person who cannot stand excess heat!I will revel in winters but unfortunately summers are not my cup of tea…..errrrr glass of juice?Well whatever it is I am going to present a very simple but delicious summer cooler for you all!It is made with natural summer fruits and absolutely delicious and refreshing!

Salted Sattu Refresher

I got 2 really sweet as honey Musk Melons (Kharbooza) from the fruit market and cut them up.I however wanted more out of them as I wanted to “drink” them as I had eaten them to my heart’s content.The idea of mixing Cucumber juice with the Melons was a fantastic idea I thought.The juice would be liquid and Melon puree a little thick.So if we blend the juices then we would get an awesome tasting drink!The more I thought about it the more excited I became.Finally I juiced some Cucumbers and pureed almost half of a remaining melon.The Melons were very sweet so the sugar content was almost negated.I used honey.The resulting elixir was so refreshing and so delicious that I planned to include this once (or twice) a week in my daily diet!

NOTE :

Check the sweetness of the Melon.You may not need to add sugar/honey if it is too sweet.

You can mix other juices into this and make a mocktail!

You can add Rose,Khus or Sandal syrups to add a dash of flavour to the drink!

PreparationTime : 30 Minutes

Chilling time : 7 – 8 hours

Makes : 4 servings

INGREDIENTS

2 1/2 cups sweet Melon Cubes

2 Cucumbers – peeled and diced

5 cups water

2 tbsp honey/powdered sugar (optional) or to taste

2 tbsp Saffron infused syrup (boil 2 tbsp sugar and 1/4 cup water with a pinch of saffron and make a light syrup,then cool to room temperature)

Snipped Mint Leaves to garnish

METHOD

Puree the Melon cubes in the blender.You can do this without adding water as they have enough water content in them.Strain through a tea strainer and add sugar/honey if using.Keep aside.

Take Cucumber dices and water in the blender and blend till the slices get crushed to form a beautiful,green liquid,which is the lovely Cucumber Juice itself.Strain this through a tea strainer and keep aside.

Cucumber juice…

In the blender add the Melon Puree.For every cup of Melon Puree add 1 1/2 cups Cucumber Juice.Blend thoroughly till amalgamated.Chill for 7 – 8 hours for the best taste.

Take the juice out in a serving glass.Drizzle 2 tsp of the prepared syrup on top and float ice cubes in the glass.Garnish with snips of Mint.

Serve with a drink umbrella on top.You can insert freshly cut fruits with the umbrella for sheer pleasure!
