Kachumbar (Indian Salad of raw, mixed, seasoned crispy vegetables)

These days we have a lot of reasons to eat salads – After all the calorie intake in a party, the desire to eat clean,or the need to lose weight or to just stay healthy and last but not least feeling lazy in the Indian summers (like me) and chopping up veggies into an awesome salad.Remember just as we love having fast foods and desserts,we need a lot of raw vegetable intake to balance the heat in our bodies. This salad originated maybe 2 centuries back in the North Indian provinces when there were nothing like “subzi” or the varied form of accompaniments for the basic Indian bread. There were the poor man’s fare but great with any kind of roti – tandoori or tava and formed a nutritious balance in the daily mealtimes.

I make this salad almost every weekend when the family is at home and love this from plain roti to dal-rice,on breads and sometimes eat it simply out of a bowl!Make Kachumber a part of your daily diet and you will be blessed with glowing skin, healthy hair, healthy body and a happy mind for having eaten something light!
