Instant Khoya/Mawa

With the Indian Festival of colours – Holi around the corner there is one ingredient which is in high demand – Khoya/Kova/Mawa which is used in Gujiya,Halwa,Gulab Jamun and Burfi recipes.Recently there was a video on You Tube which went viral showing how artificial milk with detergent powder is made in India on big festivals and how products like Khoya and Paneer can be made with this “milk”.Innocent people think nothing of buying this product with disastrous results in some cases.

However as we know that home made products are best!So for those people who cannot get Khoya due to unavailability,high demand or other reasons,here is a completely safe and easy preparation made within 15 minutes.You need ingredients like milk powder which are easily available and this can be stored refrigerated for a month!

Preparation Time : 15 – 20 minutes

Makes : 200 gms of Khoya/Kova/Mawa

INGREDIENTS

1 cup milk powder

1/2 cup milk

1/4 cup cream (collected malai can also be used)

2 tbsp unsalted butter

METHOD 

Heat butter on medium heat in a non stick pan.When it melts add cream and mix well.Now use a whisk and add the milk.Whisk well and allow the liquid to come to a boil.

Do NOT increase heat as this might curdle the milk.

When the milk comes to a simmering boil add the milk powder 1 tbsp at a time whisking all the while.When all the powder has been added into the milk increase the heat slightly and keep on stirring without leaving the mixture on heat.It might get discoloured at the bottom.

In 5 – 7 minutes the mixture will start leaving the sides of the pan.Take it on to a plate and allow it to come to room temperature.Put it preferably in a glass bowl in the refrigerator.Use as needed!
