Phirni is an Indian dessert made of rice and milk,the rice ground to a paste and then cooked with milk and condiments!
This is the first Phirni recipe on this blog and I am super excited to tell you all that this Phirni is different from the common version.This is because :
- Its made with Organic Jaggery/brown sugar and Almonds
- It uses less sugar and can be touted as an energising superfood!
You can use refined sugar but its the Jaggery that gives this Phirni a phenomenal taste.Serve it chilled in small earthenware cups!
Preparation Time : 15 minutes
Makes : 4 servings
INGREDIENTS
1/4 cup rice – soaked for 30 – 45 minutes
3 cups milk
2 tbsp Almonds (soaked overnight)
4 tbsp powdered Jaggery/brown sugar
2 tsp powdered Cardamom seeds
1 tbsp Rose/Kewra Water
1 tbsp chopped Pistachios
METHOD
Grind the soaked Almonds to a fine paste.Drain the soaked rice and grind with 2 tbsp water to a fine paste.
Heat the milk in a saucepan till it comes to a boil.Add the ground rice paste stirring continuously with a metal whisk or spatula so that the rice does not form lumps and cooks in the milk.This will take around 3 – 5 minutes.Stir well and add the Jaggery,cardamom and Almond paste.Mix well and take off heat.Cool to room temperature and add Rose/Kewra water.
Pour in small eathernware cups and sprinkle chopped Pistachios over.Refrigerate for preferably a day before serving!
