Bhatura

Bhatura is a fried bread – very chewy,puffed up and wonderfully delicious with Chole – Chickpeas Curry*.Many people crib about not being able to make the perfect Bhatura,but this is THE recipe for it.Measure the ingredients in exact amount and you will marvel at your result!

Preparation Time – 5 hours(includes fermentation time)

Makes – 8-10  big or 13 small Bhaturas

INGREDIENTS

2 cups all-purpose flour (maida)

¾ cup semolina (sooji)

½ tsp baking soda

½ tsp salt

1 tsp sugar

½ cup yogurt (approx)

1 tbsp Refined Oil plus oil for deep frying

1/2 cup water

METHOD

Soak semolina in water  for 15 minutes.

Sift salt, baking soda and flour. Add sugar, semolina and yogurt . Knead with some warm water to make a non-sticky dough. Drizzle oil over the dough and knead again very well. Keep covered in a warm place for 3-4 hours.

Before serving , divide the dough into 8-10 balls. Roll each ball into a roundels a little smaller than tortillas keeping them a little thick.Use flour to roll out if needed.

Heat oil on medium heat in a pan .Drop a Bhatura and turn on high heat.Deep fry each Bhatura individually till puffed up but still creamy in color.

Drain on a kitchen towel or napkin.Serve hot with Chole.
