When we crave comfort food and want to have something for lunch then this is one option which I always cherish.This is spiced rice cooked with chickpeas and the result – a mouthwatering pulao.
Lets get on with the recipe.
Preparation Time : 1 hour
Makes : 3-4 servings
INGREDIENTS
2 cups long grained/Basmati rice
1/2 cup Chickpeas(soaked overnight and boiled till soft)
2 tsp salt/to taste
2 bay leaves
1 big/2 small Onions – sliced
1 inch piece ginger – minced
2 Green Chilies – minced
1 tsp Turmeric Powder(Haldi)
1 tsp Red Chili Powder
1 tsp Coriander Powder(Dhania)
2 tbsp Coriander Leaves – chopped
2 tbsp Oil
2 tbsp Cream
1 tsp Cardamom Powder(Elaichi)
2 tsp Garam Masala
METHOD
Soak rice for 30 minutes and steam/boil till done.Take out on a plate to cool.
Heat Oil in a non stick pan and fry Bay Leaves till brown.Add the Cardamom Powder and fry till fragrant.Add the minced Ginger and Green Chilies.Now add the sliced Onions and fry till brown.
Add the Chickpeas and fry for 5-6 minutes.Add the Turmeric,Red Chili and Coriander Powders and mix well.Add the cream and salt.Add the rice and mix well till amalgamated.
Add Garam Masala and mix gently.
Serve sprinkled with Coriander Leaves.
Pulao served with Raita..
