Cakes have always been my favourite and I love that feeling of contentment when I know I have cakes stored in a tin and my tea time is going to be enjoyable!
The sky is the limit when I experiment with baking!I try to mix and match ingredients to create the most unusual tasting cakes!

I just am head over heels in love with Pound Cakes as they are one of the best indulgences for tea!I used a combo of Spices and Orange themed ingredients for the cake!I had fresh Oranges so I added the juice,zest (of Lemon as well) and some extract for one of the best tasting cakes!Of course the mandatory Vanilla extract was a rule for pound cake to enhance the taste.
No baking powder is used in a true pound cake.The eggs give the cake the needed rise!
Preparation Time : 75 minutes
Makes : 7 – 8 servings
INGREDIENTS
1 cup unsalted butter
1/2 cup powdered sugar
1/2 cup honey
2 cups all purpose flour
1/2 tsp salt
1/2 tsp Cardamom Powder
1/2 tsp Cinnamon Powder
1/4 tsp Nutmeg Powder
4 large eggs (at room temperature)
2 tbsp Orange Juice (fresh if possible else use concentrate)
1 tsp Orange essence
1 tsp Vanilla essence
1 tsp Orange Zest
1 tsp Lemon Zest
METHOD
Preheat oven to 350°F or 180°C.Line a baking loaf pan or bundt pan or use a foil loaf pan like I have used.
Sift flour with salt and spice powders.Keep aside.
Beat butter,honey and sugar with an electric beater till creamy.Add eggs,one at a time,beating well after each addition.Add the Vanilla and Orange essence,juice and zest.Mix well.
Fold in the sifted flour and spices and do not over mix.
Pour into prepared pan and bake for 45 minutes – 1 hour till a skewer inserted into the cake comes out clean.If the cake starts browning fast,then cover with aluminium foil to prevent excess darkness on top.
Cool cake in the pan for 15 – 20 minutes.Then unmould carefully.Let it come to room temperature.
Cut into neat slices and serve with tea.
The Cake after baking…
This cake can also be used as a pudding with sweetened,whipped cream!Try adding Orange Blossom Water (A Mediterranean Ingredient) to the cream!It will go fabulously with the cake!

The pound cake looks so tempting. I don’t know why you were so worried. Love the different flavors you’ve used. I would not have thought of using both orange and lemon together. Love your loaf tin.

Absolutely delicious bake and great choice of flavours used. Citrus flavours work best with tea time cakes and now I wish we were around for sharing a slice or 2.
