Well what can I say when it rains and that too heavily?We do not wanna cook or slog but want comfort food and something warm and comforting like a cup of hot tea!The Indian snack -Pakoda does precisely that.It sets you thinking how such a delicious but easy dish can exist.Normally its made with Garbanzo Bean Flour/Gram Flour/Besan mixed with water to make a batter and vegetables.But these are different – they are made in a different method and scrumptious with ketchup or home made chutney!
Preparation Time – 30 minutes
Makes – 12-15 Pakodas
INGREDIENTS
2 cups besan
1 1/2 tsp salt
1 medium onion – chopped very finely
2 green chilies – minced finely
1 tsp Coriander Powder(dhania)
1 tsp Red Chili Powder
Oil to fry
METHOD
Take onions and green chilies in a bowl.Add salt and mix with hands(preferably) very well.Keep aside for 10-12 minutes.Notice how the onions start “sweating” or giving out water.Now add the garbanzo bean flour,red chili powder and coriander powder to the besan.
Combine well with the water which oozes out from the onions.Add a little water if required and mix into a thick batter.It should not be runny,but thick and like a paste.
The Pakora Batter…
Heat oil on medium heat and drop small portions into the hot oil.They will float up and fry slowly.Do not make the oil too hot.Once they are golden brown remove them onto an absorbent paper and drain the excess oil.Serve hot with ketchup or any chutney of your choice.Enjoy the monsoons!
