Haryana is the free flowing milk State which borders Delhi,the Capital city and state and is rich in farm produce as well as cattle which produce one of the best milk in the country!The State has various kinds of Roti – owing to the fact that there are severe winters where sitting in front of a coal fire will not suffice!The farmers eat a diet rich in wheat,lentils and meat like chicken and mutton(goat meat).Apart from that they have a plentiful supply of milk and yogurt which is used in items like Paneer,Lassi,Chaach(chaas) and Rabdi which is had with Jalebi or Malpua.

Kriti gave me Wheat flour and lentil while I gave her any milk product and Spinach.I researched a lot on Haryanvi food and through a good friend of mine came to know about this delicious product called Gochini Atta!This is made from a mixture of wheat flour and chickpea flour/gram flour which is powdered Chana Dal!This mixture is extremely nutritious and makes delicious Roti!

This is normally had with Sarson Ka Saag but as this is not the season for Mustard Greens,I made a combo of Spinach,Radish greens and Fenugreek Greens (Methi)!I also made the roti dough like a Paratha as I cooked it in a tsp of ghee.The recipe was a runaway hit and I got to add another recipe to my favourites!

Preparation Time : 1 hour
Makes : 4 – 5 Roti
INGREDIENTS
For the Roti :
1/2 cup whole wheat flour (atta)
3/4 cup chana dal (big yellow lentils)
1 tsp salt
2 tbsp ghee
Ghee to make the roti
For the filling :
1 1/2 tsp Cumin Powder
1/2 tsp Coriander Powder
1/4 tsp Turmeric Powder
1 Green Chilli (finely minced)
1/2 tsp salt
1/2 tsp Amchur
1/2 tsp red chilli powder
2 tbsp ghee
METHOD
For the filling :
Mix all the spices,salt,green chilli and ghee to a fine paste.Keep aside.
For the roti dough :
Dry roast chana dal on medium heat till it turns pink.Cool to room temperature and powder finely in a dry grinder.Sieve the powder and add to the whole wheat flour.Add salt and ghee and enough water and bind to a soft dough.Keep it covered for 15 – 20 minutes for the wheat granules to swell for soft rotis!
Make the roti :
Divide the dough into 5 equal parts.Divide the filling likewise.Shape one portion of the dough like a cup and place one portion of the filling in it.Re roll into balls and roll into 4 inch roti with a light hand taking care that the filling does not come out.Place the roti on a hot tava and cook both sides.Now spread one side with 1 tsp ghee and flip it over for the ghee side to get roasted.Spread a tsp of ghee on the other side as well and cook the roti on both sides till well roasted with brown spots.
Prepare all the roti this way.
Serve :
Serve the delicious roti with homemade white butter,saag or with pickle!

Served with Mixed Saag,homemade white butter and a glass of Chaach(Chaas)
Amu, loved the whole platter. While the rotis are delicious, I cannot take my eyes off the saag topped with white butter. I woudnt mind generous helpings of the saag along with hot rotis as part of my meal now, even though its hot like hell here. Super share! Loved the recipe.

The roti looks simply yum, I loved your way of making roti’s and that you have used fresh chana dal powder. We mix it with besan, and make on on direct flame.
