In North India,when the bride enters her husband’s home after marriage,it is a big occasion with multiple family members,friends and neighbours coming to see the bride and asking her multiple questions about herself,her family and her likes and dislikes.One very crucial question which concerns the elder women population among family,friends and neighbours is whether the bride could cook and if yes then how well!Here is where she is initiated into the family kitchen to show off her prowess!

This ritual has been shown in numerous Hindi movies (Humraaz -2003 for instance) where the bride makes something for the family.Indians prefer something sweet for a start and so the preference is a dessert of her choice.However this recipe is preferred mainly because its easy to make,delicious to eat without messy hands,is a traditional recipe of the North Indian region and is loved by everyone with some lovely homemade pickle.The assortment of pickles for this delicious snack very from Mango,Lemon and Red Chili including pickles made from traditional fruits and produce like Glutinous Fruit(Bora),Keronda(Biological name – Carissa Carandas) and plain green chilli pickles.

Personally I love Gulgula Pua with homemade Lemon Pickle and have presented both of them in the recipe!

Delicious Gulgula Pua served with homemade Tangy Lemon Pickle!

Preparation Time : 30 minutes

Makes : 15-17 Gulgula Pua

INGREDIENTS

2 cups whole wheat flour(atta)

1 tbsp fennel seeds(saunf) crushed coarsely

1 cup plus 3 tbsp milk

3/4 cup powdered sugar

1 tsp Cardamom Powder(optional)

Oil/Ghee to fry

METHOD

Mix the sugar in the milk and mix well with an egg whisk till sugar is completely dissolved.

Sift flour and add cardamom powder(if using).Start mixing the milk and keep on whisking till you get a very thick batter (much like a fruit cake batter) which does not drop easily.Medium to thin batter will not make perfect Gurgle shapes and will fall flat while frying.

Heat oil in a non stick pan and when hot enough,drop spoonfuls of batter into the oil.Deep fry on medium heat till brown in color.

The Gulgula Pua after frying..

Serve hot or at room temperature.

Personal Tip 

Can be kept for a day without spoiling and is perfect for trips,picnics and long travelling tours!
