These Laddus are awesome!They are instant,melt in the mouth and delicious.Made in 15 minutes flat this is a great dessert for people who want their mouths to be sweet all the time!
Preparation Time – 15-20 minutes
Makes – 11-12 Laddus
INGREDIENTS
1 tin Condensed Milk
1 1/2 cups milk(toned/full cream)
1/4 tsp Citric Acid crystals(dissolved in 2 tbsp hot water)
OR 2 tsp Lemon juice
1 tsp Cornflour/cornstarch dissolved in 1 tbsp water
1 tbsp ghee
4-5 Saffron strands
2-3 drops Yellow Food Color(optional)
2 tsp Cardamom powder(elaichi)
2 tbsp roughly crushed Pistachios
Sugar to taste(optional as the Condensed Milk has ample amount of sugar added)
METHOD
Heat the ghee in a nonstick pan and add the Condensed Milk,the 1 1/2 cups milk and the Citric Acid water/lemon juice.
Mix well and you will see the milk curdling.After the milk curdles,add the cornflour water and mix.
Now on medium-low heat,keep stirring the milk till it reduces to a granular consistency.Add the Saffron.
Notice the lovely color – due to addition of Saffron!
After cooking for 7-8 minutes!
After cooking for 10-11 minutes..
This will be quick and you need to keep stirring the mixture not allowing it to stick to the bottom of the pan.
After 12-13 minutes the mixture will leave the sides of the pan.
Mixture leaves the sides of the pan..
Stir for 2-3 minutes on low heat and empty it out on a steel plate to thali.Add the cardamom powder and mix well.Divide the mixture into two and to one half add the food color.
Adding the color to half the mixture…
Mix and cool it to lukewarm.
With hands moistened with water,shape both the halves into small laddus or rounds.Arrange them on a plate.
Press roughly crushed Pistachios on each Laddu.Serve warm or at room temperature as a dessert!
