Khaman Dhokla is one of Gujarat’s trademark snacks which you will find everywhere.This comprises of sandwiching two rounds of delicious steamed dhokla with fresh green Chutney and topping with a scintillating “tadka” or tempering.
Served with Coriander – Coconut Chutney,this recipe will be a favourite once you start making it!
Preparation Time – 1 hour (plus fermentation overnight)
Makes – 10-12 pieces
INGREDIENTS
For the Dhokla:
1 cup rice(preferably any short-grained rice like Mansoori,Shakkar Chini or Kolam)
1/4 cup Urad Dal(white lentils)
1/4 cup sour yogurt(keep fresh yogurt covered overnight to get sour yogurt)
4 tbsp Oil
1 tsp fresh Green Chili paste
1 tsp fresh Ginger paste
1 tsp soda bicarb
2 tsp lemon juice
For the Green Chutney:
1 bunch Coriander Leaves – washed snd chopped
3 Green Chilies – chopped
1 inch piece Ginger – chopped finely
3-4 cloves Garlic(optional)
2 tsp Salt
For the tempering(tadka):
1/4 tsp Mustard Seeds
1 pinch Asafoetida
5-6 Curry Leaves
METHOD
For the Dhokla:
Wash the rice and Urad Dal.Soak them in 3 cups of water for 4-5 hours.
Drain the water and grind the rice and dal with 1/2 cup of water to a fine batter.It should be like a dosa batter.
Transfer the batter into a bowl and add the sour yogurt.Whisk well and leave to ferment overnight.

In a chutney grinder,grind all the ingredients for chutney into a thick consistency.
Next day heat water in a steamer.
In a small bowl,mix together 1 tbsp Oil,2 tsp lemon juice and the soda bicarb.Mix well and add to the batter.Whisk again till mixed.
Grease two dhokla plates and pour half the batter into each one.Steam for approximately 15 minutes on medium heat till a knife inserted comes out clean.
Cool for 10 minutes and loosen sides with a knife.Take the steamed dhokla out on a plate.
Assembling the sandwich:
Take a plate and put one round of Khaman Dhokla on it.
Spread the chutney generously over it and top with the other round.Press lightly.

Heat 2 tbsp oil and add the mustard seeds.when they crackle,add Asafoetida and curry leaves.Pour over the Dhokla sandwich.
Cut into squares or whatever shape you like.
Served with Coriander Coconut Chutney
Serve hot with Coriander – Coconut Chutney or whatever accompaniment you like with hot tea.
