INGREDIENTS
200 gms Yellow or Orange Pumpkin
2 tbsp Mustard Oil(Optional)
Salt to taste
1 tbsp Sugar
1 tsp Red Chili Powder
2 tsp Coriander Powder(Dhania)
1 tsp Garam Masala Powder
1 tsp Turmeric Powder(Haldi)
1 tsp Cumin seeds(Jeera)
1 Dried Red Chili(split)
1/2 tsp Fenugreek seeds(Methi)
1 tsp Asafoetida
2 tbsp Coriander Leaves – chopped fine
METHOD
If the skin of the Pumpkin is tough,then peel the Pumpkin and cut into wedges.
The whole piece of Pumpkin..
Cut into wedges..
Heat oil in a pan and add Cumin seeds and the dried Red Chili.When the seeds crackle,add the Fenugreek seeds and Asafoetida.Stir and add the Pumpkin wedges.
Add salt,Red Chili,Turmeric and Coriander Powders.Cover and cook till fork tender.
Now add the Garam Masala and sugar and cook till sugar caramelizes and gives a wonderful color to the Pumpkin.Add Coriander Leaves and take off heat.
Serve hot with fresh Puris,Paranthas or Roti.
