This dish of rice is delicately flavored with Lemon Juice plus has a filling texture – have it with Aviyal or fresh,fried Papads – the taste is unbeatable!
Preparation Time – 30 minutes
Makes – 2-3 servings
INGREDIENTS
2 cups long grained/medium grained fine rice
Juice of 2 Lemons
Salt to taste
2 tbsp Chana Dal
2 tbsp Urad Dal
Water to soak
2 tsp Turmeric Powder(Haldi)
1/4 cup peanuts
5-6 curry leaves – fresh or dried
2 tsp Mustard Seeds(Rai)
2 tbsp Refined Oil
METHOD
Cook the rice either by boiling or steaming.Keep aside to cool.
Soak both the Dals – Urad and Chana in 1/2 cup water for approx 30 minutes.
Heat Oil in a Wok or Kadai and add Mustard Seeds.When they pop add the soaked Dals.
Fry the Dals till they turn pinkish and add the peanuts and curry leaves.Fry till peanuts turn dark(not black).
Now add the rice to this Masala and mix very well.Add the lemon juice and mix well ensuring the grains do not break.
Mixing in the Rice
Let it stand for approx 10-15 minutes to let the flavors permeate.
Serve hot with fried papads.lemon pickle or any curry like Aviyal.
