There are times when we yearn for edible things which are not available where we stay and forage the markets as well as online looking out for them and making notes of which recipes we would make when we get our hands on exotic ingredients which make us go excited and we want to include them in yummy and tempting recipes.One of such ingredients were Rocket Leaves!
Rocket Leaves are termed “Eruca sativa” in biological terms otherwise called Arugula as well.It is used as a salad vegetable as well as on Pizzas,to garnish Pastas,cooked Sausages and most importantly in Salads.I was thus very elated,surprised and happy seeing these delicious Rocket Leaves at Mumbai’s famous Crawford Market.Along with that I got Romaine Lettuce,Green Leaf Lettuce,fresh Basil,beautiful green and crispy Granny Smith Apples,Thai ingredients and a lot of exotic produce!
A salad was always in my mind to make with these fresh Rocket Leaves and it was a dream come true when I finally whipped up a delicious and healthy lunch which was loved to the core!
I also had a beautiful ceramic Salad Bowl gifted to me which I wanted to use.A Rocket Salad was the best way to start using the bowl!So here are what Rocket Leaves look like :
You can make this salad with Indian salad leaves (called salad patta) available readily or use boiled Cabbage.This is an utterly lip smacking Winter Salad.
Preparation Time : 30 minutes
Makes : 4 servings
INGREDIENTS
For the Salad :
50 gms Lettuce leaves (Iceberg/Romaine/Green Leaf) – roughly torn
50 gms Rocket Leaves
2 cups Sweet Corn kernels – boiled
1 tbsp butter
1 tsp salt
1 tsp white pepper powder
1 Granny Smith Apple/Red Delicious Apple – diced
2 medium Tomatoes – diced
For the dressing :
1/4 cup Olive Oil
1 tbsp Apple Cider Vinegar/white vinegar
1/4 tsp Dijon Mustard/1 tsp Mustard Powder
1 clove Garlic – minced
1 tsp honey
1/2 tsp mixed herbs – Rosemary,Thyme,Oregano,Basil
Salt and white/black pepper powder to taste
METHOD
Prepare the dressing :
Mix all the ingredients for the dressing in a bowl or a jug.Stir till thoroughly mixed and keep aside.
Prepare the Sweet Corn Kernels :
Heat butter in a fry pan and add the Sweet Corn kernels to the pan.Toss and cook for 4 – 5 minutes till cooked,tender and a delicious aroma emanates!Add the salt and pepper and mix well.Keep aside.
Mix the Salad :
Add all the Salad ingredients including the prepared Sweet Corn kernels in a large salad bowl.
Pour over the dressing and mix thoroughly with 2 mixing spoons/one spoon and one fork till everything is thoroughly amalgamated.
Spoon equal portions into salad serving bowls and serve immediately.
