Masala Rice – Recycled from day old leftover rice

A common recurrence in almost every home,leftover rice is boring but challenging at the same time.Masala Rice is what I came up with when I had approx 4 servings of rice leftover from a dinner party.Next day saw the transformation into this delicious “avtaar”.

I have added a little much of peanuts as I love them but people who do not like them or want them less can add them accordingly.Here is the recipe…

Preparation Time – 15 minutes

Makes – 4 servings

INGREDIENTS

3 cups leftover rice/cooked rice

1/4 cup peanuts(less or more if you prefer)

2 tsp Mustard Seeds(rai)

1 dried red chili

2 tbsp plus 2 tsp Oil

2 tbsp Coriander leaves

Salt to taste

2 tbsp Chole Masala

1 Onion – sliced

5-6 curry leaves

METHOD

Heat Oil in a a pan and add the Mustard Seeds and dried red chili.When they pop,add the peanuts and curry leaves and fry till the nuts turn golden brown.Now add the Onions and cook till they are translucent.

Add salt and Chana Masala and stir well.

Now add the rice and mix well to incorporate.Add Coriander leaves and drizzle the 2 tsp Oil over the rice.Mix well.

Mixing all the ingredients..

Serve hot with Papads,any pickle or Raita.

NOTE – Adding 1-2 cubed boiled potatoes makes this dish even more delicious!
