Masaledar Bhindi (Spiced Okra)

This is a spicy but very tempting Okra Fry.I have come across people who were desperate to know how to cook Okra and how to serve with Rotis.I got a few requests from people abroad as well who love Rotis and Paranthas to give them tips on the various methods to cook Okra the Indian way.In a previous post I mentioned a mild fry.This is a tad bit spicy with the Okras cut into bite size pieces which will further enhance the senses!

Preparation Time – 30 minutes

Makes – 3-4 servings

INGREDIENTS

300 gms Okra – tips removed

Salt to taste

2 tbsp oil

1 tsp Red Chili Powder

1 tsp Turmeric Powder(Haldi)

1 tsp Coriander Powder(Dhania)

1 1/2 tsp Garam Masala (ready available)

1 tsp Cumin Seeds

1/2 tsp Asafoetida

1 1/2 tsp Fennel Seeds(saunf)

METHOD

Cut the Okra into bite size pieces.For a medium Okra cut in half whereas for a long one,cut into 3 parts.

Heat oil in a pan and add Cumin seeds and Asafoetida.When they splutter add the Okra.Add salt,Red Chili Powder and Coriander Powder.Stir well and cook on low flame till a little crispy and done.

Add the Garam Masala and mix well.Cook for a minute more.Sprinkle Saunf on top.Stir well

Remove from heat and serve hot with Rotis or Paranthas.Yum!
