Matar Poori/Matar Kachori/Koraishutir Kachuri(Bengali)/Fried Peas Bread

This Poori/Kachori is the highlight in the Breads section of all weddings in Uttar Pradesh. Normally because of the Peas filling inside the dough is colored green by adding food colors which makes the dish even more palatable.But here I am using plain Wheat Flour Dough as the casing with a delicious Pea filling which will add a lovely twist to your parties and occasions.Make this when you are in a mood to splurge..and you will never regret it!

Served with homemade Green Chili Pickle…

INGREDIENTS

For the Casing:

1 1/2 cups Wheat Flour

1/2 tsp Salt

2 tsp Oil

Oil for frying

For the Filling:

1/2 cup Peas – fresh or frozen

Salt to taste(preferably 1 tsp)

1 1/2 tsp Coriander Powder(Dhania)

1 tsp Chili Powder

2 Green Chilies

1 tsp Turmeric Powder(Haldi)

1 tsp Oil

METHOD

For the Filling:

In case the Peas are fresh,boil them till soft with a pinch of salt.Grind the Peas with the Green Chilies.Do not add any water.Heat Oil in a pan and add the peas.Add Turmeric,Chili and Coriander Powders and Salt.Mix well.Cool to room temperature.If you are making this in advance,keep it refrigerated.

For the Casing:

Add salt and Oil to the flour and with the help of water,knead to a soft and pliable dough which should not stick to the sides of the bowl.Keep this dough covered with a cloth or a glass/steel plate.

Making the Kachoris:

Make small balls out of the dough made.Flatten each ball and make a cup out of it.Put 1 tsp of filling in between and seal the edges to close.Bring the edges together and roll with a rolling pin where the edges meet into a circle.

Use up the dough and Filling to make roundels the same way.

Heat Oil in a Kadai or a Deep Fryer on medium heat.Deep fry each Poori/Kachori individually till crisp and cooked from inside.Do not make the heat too much or the Kachori will burn outside and not cook inside.Take out on a paper napkin to drain the oil.

Serve the Kachoris with Sweet Curd,Pickles or Tamarind Chutney.Can also be served with a spicy Potato stir fry but the taste of the Peas would be lost.Best served on its own!

  • Thx so much Priyanka..:)..thanks for the suggestion…I had curd and pickles at hand..:)next time will surely make Dum Aloo..:)I also used.Amer Chutney which was very delicious..:)
