Mini Khandvi Bites

Khandvi is one of the best known Gujarati snack items on the Indian plate!It consists of Gram Flour/Garbanzo Bean Flour/Besan which is cooked to a paste,spread out thinly and rolled up.I gave this a delicious twist as I made it into bite sized delights to be had with hot Ginger tea!

The main thing about Khandvi is that it is low in calorie and great in taste.There is a tsp of oil applied on the surface on which it is spread and approx 1 tsp oil per 4 pieces of Khandvi for the tempering!So this is one ideal snack you can make for diabetics,weight loss aspirants and people who want to maintain themselves!As far as occasions are concerned it is a good idea to serve this to guests as you will be feeding them healthy as well!This is made in 10 minutes flat with 5 minutes for cooling off and 5 minutes for the tempering and assembling.Within half an hour you have a delicious and healthy snack to eat which is low on time and cost as well!

Preparation Time : 30 minutes

Makes : 9 Khandvi/18 Khandvi bites

INGREDIENTS

For the Khandvi :

3/4 cup Gram Flour/Garbamzo Bean Flour/Besan

1/2 tsp Ginger-Green Chilli paste (preferably freshly made)

1/4 tsp Turmeric Powder (Haldi)

1/4 tsp Asafoetida (Heeng)

1 1/2 tsp salt/to taste

3/4 cup yogurt

1 cup water

1 tsp Oil

For the tempering :

1 tsp black Mustard seeds (Rai)

1 tsp white Sesame seeds (safed til)

1/2 tsp Asafoetida (Heeng)

1 tbsp Oil

1 tbsp chopped Coriander Leaves

1 tbsp grated Coconut (optional)

METHOD 

For the Khandvi :

Put the gram flour in a bowl.Add the salt,asafoetida and turmeric and whisk well.Now add the water 1/4 cup at a time and keep whisking till you get a thick paste.Add the rest of the water and yogurt and whisk very well to combine.Add the ginger chilli paste and whisk again.

Grease a flat surface like a thali or large plate,a big tawa/griddle or a clean countertop.Pour the gram flour mixture into a non stick pan and place on medium heat stirring constantly.In 4 – 5 minutes the mixture will thicken to form a sticky mass.Lower the heat and cook this for 3 – 4 minutes.Take a spatula and apply approximately 1 tsp of the mixture on the greased surface.Wait 1 minute and try peeling it off.

If it peels away easily without sticking to the surface,the mixture is ready else cook it 1 – 2 minutes more.Spread the cooked gram flour paste in a thin coat over the surface.Mark out straight lines with a knife.Cool for 5 minutes.

After 5 minutes it will come off easily and you can roll it up like a fruit roll.Cut each Khandvi roll in half to make bite size pieces.Put these pieces neatly on a serving plate or platter.

Make the tempering :

Heat Oil and add the Mustard seeds and asafoetida.When the seeds pop,add the Sesame seeds and take off heat.The sesame seeds will turn a rosy red.Spoon the tempering 1 tsp at a time over the prepared Khandvi bites so that each piece has some tempering on it.

Sprinkle grated Coconut and chopped Coriander on top.Serve with hot tea!
