Mixed vegetable cheesy balls

Talk about snacks and all of us encore in unison.These days the trend is cheese….and more cheese.Children are the most obsessed with cheese that too Mozzarella thanks to the ever growing demand for Pizzas,Calzones and Mexican food.These the doctor says is calorific,bad for the health….and so many things more!

But a challenge spruces us up for a change in our daily diet.Lets forget our daily diets for a day and indulge in something so wonderful and special that we pamper our tastebuds to glory.An invention of something really delicious will do so.

Veena gave me 2 very simple vegetables to experiment with – Carrot and Beans.Its easy to combine the both and make a simple subzi but I wanted something more interesting which would also be loved by kids.A deep fried item stuffed with loads of creamy,stretchy Mozarella Cheese was definitely the choice.Here is a view of how the balls looked like – freshly drained from the oil:-

Now as you must be salivating ,here is the recipe!Enjoy everyone!

Preparation Time – 1 hour

Makes – 7-8 balls

INGREDIENTS

For the Casing:

5-6 slices of bread

5-6 boiled and mashed potatoes

Salt to taste

For the Filling:

1 cup chopped beans – boiled for 10 minutes in salted water

1 cup grated Carrot – any variety

1/2 cup chopped colored Bell Peppers

1 cup grated Mozarella Cheese

1/2 cup finely cubed Paneer

Salt and Pepper to taste

1 tsp Chili Flakes

METHOD

In a bowl mix the mashed potatoes and salt.Dip the bread slices in a bowl of water and squeeze out the water.Add to the potatoes and knead to make a soft casing dough.Keep aside.

In another bowl mix the vegetables,paneer,the salt,pepper,chili flakes and cheese.

Take a lime sized portion of the casing and fill 1-2 tsp of filling inside.Mold the casing over the filling that it envelopes it completely.Make all the balls this way.Refrigerate the balls for 15-20 minutes.

Heat oil in a pan on medium heat and when sufficiently hot,deep fry the balls 2-3 at a time till golden brown outside and the cheese melts from inside.You can test it by cutting open a fried ball.

Serve hot with any chutney or ketchup.
