Nutritious Herb Parantha

This is my third entry for Priya’s Shhhhh Cooking Secretly Challenge.This event really makes all of us put on our thinking caps and innovate to the maximum.For people who are reading this post for the first time,this is an event where pairs of Food Bloggers are made,and out of them each have to give 2 ingredients to the other.The other has to do the same thing and both come up with a completely new and innovative recipe.These recipes are very simple and can be made with the normal ingredients you get in the market.

For the event for this month,I was paired with Sangee Vijay who has a wonderful site at:

Sangee gave me 2 ingredients – Cilantro(Coriander Leaves) and Wheat Flour.I decided to combine some more herbs and turn them into a wonderful Parantha which is quite refreshing to eat with a sweet pickle and yogurt.Thank you Sangee for inspiring me to make something innovative and thank you Priya for starting the wonderful event!Here is the lovely logo for the event –

Lets proceed to the recipe now:

Preparation Time – 2 hours

Makes – 6-7 Paranthas

INGREDIENTS

1 cup whole wheat flour(atta)

1 tsp salt

2 tsp oil

1 tbsp Cilantro(Coriander) Leaves(Dhania) – chopped finely

1 tbsp Fenugreek Leaves(Methi) – chopped finely

1 tbsp Curry Leaves(Kari Patta) – chopped finely

1 tbsp Parsley(optional) – chopped finely

1/2 tbsp Mint Leaves(Pudina) – chopped finely

Water as required for kneading

Oil to pan fry

METHOD

Mix all the chopped leaves in a bowl.Mix in the Salt and keep aside for 15-20 minutes till the water oozes from the leaves.

Add the flour,oil and enough water and knead to make a soft dough.Keep aside for 1-1 1/2 hours.

Roll into Paranthas and pan fry on a Tava(griddle) till golden brown and speckled on both sides.

Serve hot with yogurt,pickle,chutney or with a cube of Cheese as I have done.
