Okra Stir Fry – Simple as it is!

This is another of those dishes which I find irresistible with Rotis and Paranthas and incredible easy and simple to make!I have made it with Okra but sometimes add Onions which add their characteristic lovely taste.That recipe will be shared later on but this is a plain stir-fry which is made in minutes!

Preparation Time  – 20 minutes

Makes – 2-3 Servings

INGREDIENTS

350 gms Okra – snipped at both ends and cut into pieces

2 tsp Oil

Salt to taste

2 tsp Coriander Powder(Dhania)

1 tsp Red Chili Powder

1 tsp Cumin Seeds(Jeera)

1 tsp Asafoetida

1 tsp Dry Mango Powder(Khatai/Amchur)

Method

Heat Oil and add Cumin Seeds and Asafoetida.Fry till the seeds are brown.Add the Okra pieces and stir briefly.Add the salt and spices.Cover and cook for approx 15-20 minutes till cooked.

Serve hot with Rotis or Paranthas.
