Orange Pineapple Popsicles

This is a delicious summer recipe which keeps you cool and without the diary quotient in the recipe.From the elderly to children,everyone loves popsicles.This is a recipe involving real fruit juice and fruit pieces for aa real summer feel.

Remember that Popsicles require a small amount of sugar syrup to prevent them from freezing hard.The sugar prevents the water and fruit content from freezing all the way and ensures complete enjoyment while having the popsicle!We used to enjoy Orange Popsicles as a child and this recipe will bring back nostalgia!

NOTE :

For adult parties you can add 2 tbsp of Orange Liqueur like Grand Marnier or Triple Sec or Pineapple flavoured Vodka or Malibu or White Rum into the Popsicle mixture.Do not add sugar syrup (you can if you want the sweetness) as the liqueur will act the same way as the sugar syrup – not let the liquid freeze hard!

Preparation Time : 30 minutes

Freezing time : 24 – 30 hours

Makes : 4 Popsicles

INGREDIENTS

For the Popsicles :

2 cups Orange Juice (freshly extracted and strained or store bought)

2 cups Pineapple Juice (freshly extracted and strained or store bought)

4 Orange segments (optional)

4 slices  of 1 inch Pineapple (optional)

For the syrup :

4 tbsp sugar

1/2 cup water

METHOD

Prepare the syrup :

Heat the water and sugar in a saucepan and bring to a boil.Simmer till a slight syrup is formed.Do not make the syrup too thick.Leave to cool to room temperature.

Make the Popsicle mixture :

Add the Orange and Pineapple juices to the prepared syrup and whisk well with a wire whisk till well blended.

In a Popsicle mould,drop a slice of Orange or Pineapple (or both if you want it to be more festive) and pour the mixture over it with a soup ladle.Repeat for all the moulds and cover the top with the lids and freeze for a minimum of 24 – 30 hours.

Serve :

Dip the moulds in warm water to loosen the Popsicles.Serve over a bed of ice.You can freeze your favourite juice in ice moulds and serve with the Popsicles if you like!Keep chilling!
