Believe me this is a superfast and super tasty recipe to indulge in.Its made in minutes with absolutely no preparation and the simple cutting vegetables which will be full of enthusiasm while waiting to make this dish.Once you have it you just cannot stop.

Makes – 4 servings
INGREDIENTS
2 cups Basmati rice
1 bunch fresh/frozen Spinach -chopped finely
2 medium Onions – sliced
2 tbsp Oil
1/2 tbsp Ghee(optional)
2 Bay Leaves
2 Black Cardamoms(Badi Elaichi)
3 Green Cardamoms(Choti Elaichi)
1 Star Anise
6-8 Cashewnuts
10-12 Raisins
Salt to taste
1 tsp Coriander Powder(Dhania)
1 tsp Cumin Powder(Jeera)
3-4 Cloves
METHOD
Steam rice in a pressure cooker/steamer till done.Spread out on a plate to cool.
Heat the Oil and Ghee and add Bay Leaves,Cloves,Green and Black Cardamoms,Star Anise,Cashewnuts and Raisins.Fry on low heat till the spices lend out their aroma and the Raisins plump up.
Now add the sliced Onions and fry till they turn translucent.Add the chopped Spinach and fry for a minute.Add salt,coriander and cumin powders and mix well.
Now add the rice and mix gently ensuring the grains don’t break.Mix till the rice is well amalgamated with the other ingredients.Check seasoning here.
Cook for 2-3 minutes and take off heat.
Serve hot with any kind of Raita.
