Peanut Brittle

Who loves Indian candy like Chikki or they call it Patti as well in some places.They are crushed nuts combined with caramelised sugar,heated and set in a greased tray.

Peanut brittle is the Western version of Chikki with a little bit of addition here and there and infinitely delicious.Its so tempting to put a jar of these crunchy,munch tasty pieces in a glass jar and watch them disappear one by one!Everyone loves them from children to elderly aunties and uncles and no one can eat just one!Lets check the recipe out!

WARNING – We are dealing with a lot of heat here and its a quick recipe.So be very careful and do not have children or pets nearby.

Preparation time : 30 – 45 minutes

Makes – Approximately pieces

INGREDIENTS

1 cup granulated sugar

3 tbsp Corn Syrup/liquid glucose(easily available in big supermarkets or even online shopping sites)

1 cup butter/oil

1 cup Condensed Milk

1 tbsp vanilla extract

1 cup crushed peanuts

METHOD

Grease a baking tray/thali/back of a plate with butter or oil.If using a silicon tray like I did then no need to grease it.

Heat sugar on medium heat in a non stick pan to caramelise it.It will melt slowly.

The sugar caramelised…

After the sugar melts into a sticky brown syrup(which means it has caramelised),add the corn syrup.There will be a lot of bubbles which will eventually subside.

Add the condensed milk and mix well then add butter or oil.mix again.

Add the chopped peanuts and continue to stir till mixture leaves the sides of the pan and turns a little dark.Add the vanilla extract here.

Pour into the greased tray and allow to cool.After it is partially cool mark pieces with a knife.Leave to come to room temperature.

Break into pieces by hand or with a hammer if the brittle is hard and cannot be broken.Store in an airtight container or cookie jar.

NOTE – Always use a non stick pan which is double the quantity made for easy stirring and pouring out.
