In summers we need something light and this stir fry fits the bill.Its so delicious with chunks of crispy vegetable and cubes of soft and juicy paneer sprinkled with freshly crushed black pepper.A real treat to the palate!
Preparation time: 30-45 minutes
Makes – 3-4 servings
INGREDIENTS
1 cup cubed Cabbage
1/2 cup French Beans – cut into 1 inch pieces
1 Carrot – cut into roundels
1 Capsicum – cubed
1 Tomato – cut into strips
200 gms Paneer cubed
1 Onion – sliced
1 tbsp grated Ginger
2 tsp Salt
2 tsp Sugar
4 tbsp Milk
1 tbsp Oil
2 tbsp freshly ground Pepper
Coriander leaves to garnish
METHOD
Heat sufficient water in a pan and add 1 tsp Salt and 2 tsp Sugar.When the water boils,add Cabbage,French Beans and Carrot.Boil till just done but still crispy.Drain the water and cool.
Heat Oil and add the sliced onion.Cook till translucent and add the tomato.Add the boiled vegetables and sauté till the vegetables are cooked for approx 3-4 minutes.Add the salt and 1 tsp Pepper.Mix well.
Add the Paneer and milk and mix well.Cook for 2-3 minutes more.
Take out on a serving plate and sprinkle the rest of the crushed Pepper and Coriander leaves.Serve hot.
