Phool Makhana or simply Makhana also called Fox Nut in English is a plant native to Asia and in India,its used for auspicious days while fasting and also for pregnant women for nutrition!
Today we are going to see how these Fox Nuts can be used in a beautiful,lip smacking dessert .The beauty of this dessert is that there is no flour or grains included.
Fox Nuts – how they look..
Preparation Time – 45 minutes -1 hour
Makes – 4 servings
INGREDIENTS
2 cups Fox Nuts or Makhana
1 liter Cow’s Milk
1/2 cup Sugar or to taste
1/4 cup Condensed Milk(Optional)
2 tbsp Mixed nuts – Almonds,Cashewnuts,Pistachios,Chironji(Chiroli)
1/2 tbsp Raisins
2 tbsp Ghee
1 tsp Cardamom Powder(Elaichi)
1/2 tsp Nutmeg(jaiphal) grated
METHOD
Heat 1 tbsp ghee in a non-stick pan and add the Makhana. Toss and stir till the Makhana turns from soft and “thermocol texture” to hard and crunchy.Keep aside to cool.
Roasting the Makhanas..
Heat milk in another non stick pan and heat till it reduces by a quarter.Add sugar and the Makhanas.Stir till the Makhanas have become soft and fork tender.Add the grated nutmeg.

Adding the Makhanas..
In a small pan fry the nuts in the remaining 1 tbsp ghee till brown.Add the raisins and fry till they swell up.Add them to the Kheer.

Now keep on heat for 2-3 minutes and take off.Cover with a clean cloth and allow to come to room temperature.
Add the Condensed Milk here(If adding) and stir well.
The Kheer after cooking..
Serve warm or cold – its both ways delicious!
