Potato Podimas(South Indian Potato Fry)

Podimas is a Potato Fry or what we can say as a South Indian Subzi  which is used as an accompaniment with South Indian Curries and especially Sambar.It is especially wonderful with a special Sambar called Vengaya Sambar or Arichavittu Sambar(recipe here:

which is characterized by grinding Coconut with spices.

Podimas can also be had with Roti or Puri if you like the taste of Coconut with Indian Breads.

Preparation Time – 20 minutes

Makes – 3-4 servings

INGREDIENTS

5-6 Medium sized potatoes – boiled,peeled and mashed

Salt to taste

2 tbsp Coconut Oil/Refined Oil

1 tsp Mustard Seeds(Rai)

1 Dried Red Chili

1 tsp Turmeric Powder(Haldi)

1 1/2 tsp white Urad Dal(Urad Lentils)

2 1/2 tbsp Grated Coconut/Desiccated Coconut-soaked in 4 tbsp hot water

2 Green Chilies

6-8 curry leaves

METHOD

In a blender crush the Coconut with the green chilies.

Heat Oil and add the Mustard Seeds and dried red chilies.Add the Urad Dal and after the seeds pop,add the curry leaves and mashed potato.Mix well and add salt and turmeric powder and mix.Cook for 5-7 minutes on very low heat.

Add the Coconut -green chili paste and mix well.

Remove to a serving dish and garnish with curry leaves.Serve hot!
