Quick Cheese Sandwiches

Sometimes when we feel ravenously hungry and feel that we badly need carbs to balance our body nutrition,and we feel that we need a “cheesy” treat (like me) then this is the recipe for you.Made in 4 minutes per sandwich this is one recipe for which I recommend that you stock up on ingredients beforehand so that making the sandwich is a breeze and you satisfy your hunger in the least possible time!

This recipe is a sure hit with kids and adults alike and you can include as many crispy vegetables as you want to give a nice bite and texture.

NOTE:

1.Use only the big sliced Sandwich Bread available in bakeries for this recipe.Any other normal bread would result in the slices breaking or the filling spewing out.

2.Use crispy vegetables like Capsicum,Onions,Carrots,Cabbage,Zucccini,Cucumber,Beetroot,firm Tomatoes and whatever variety is available in your area.Remember that all vegetables should be chopped to EXACT very small cubes.Use a vegetable chopper if needed.I had only Capsicums and Onions so used those.

3.Grate the Cheese and leave it at room temperature for it to soften.The filling cooks faster and the cheese melts quicker then.

4.I have not used salt as the Mozzarella Cheese contains salt and you will eat the Sandwich with any Chutney or Ketchup which will already contain salt.

So here is this wonderful recipe for keeps!

Preparation Time : 4 – 5 minutes

Makes : 3 big or 6 small or 12 mini Sandwiches

INGREDIENTS

6 slices Sandwich Bread

1 cup Mozzarella Cheese – grated

1 cup chopped finely and mixed assorted vegetables

1 1/2 tbsp Chili Flakes

1 1/2 tbsp Oregano

1 1/2 tbsp grated Garlic(optional)

3 tbsp Oil/melted butter

METHOD

Mix the chopped vegetables and cheese in a bowl.Divide into 3 equal portions.

Heat 1/2 tbsp Oil or butter in a fry pan on low heat and put 1 slice of bread on it.Sprinkle 1/2 tbsp Chili Flakes and 1/2 tbsp Oregano on it and spoon over one portion of the cheese and vegetable mix on top.Sprinkle 1/2 tbsp of the grated garlic.Spread another 1/2 tbsp Oil or butter on top of another slice of bread and press it on top of the mix keeping the Oiled/buttered side up.

Cover the pan and cook the sandwich for 2 minutes on very low heat.With a flat spatula flip the sandwich very carefully so the greased side of bread starts cooking.Again give 2 minutes this side as well.

Open the pan after 2 minutes and check.You will see that the cheese has nicely melted and coated the vegetables and spices.

Take out on a plate and leave to cool a bit.After the bread has cooled and the cheese has set a little,cut diagonally into 2 or 4 parts as per choice.

Serve warm with ketchup or chutney of your choice.Real yummy!
