Royal Hara Bhara Kabab

If you are in the mood for something special and have time for creating something awesome,this is the choice.The casing is made with assorted greens while the stuffing is a lovely,creamy texture and the combo is ethereal.This is best served with hot tea or as a lovely starter to a wonderful feast.One guarantee that the guests will take the taste and flavor home to be relished forever.

Preparation Time – 2 hours

Makes – 7-8 Kababs

INGREDIENTS

For the casing:

1 bunch Spinach – blanched and pureed

1 Bell Pepper/Capsicum

1 cup freshly cut Spring Onion greens

2 Green Chilies

1 tbsp Oil

3/4 tsp Shahi Jeera

1/4 tsp Turmeric Powder(Haldi)

1 tbsp Ginger-Garlic Paste(optional)

1/2 tbsp Green Chili paste

1/2 tsp Coriander(Dhania)

1 tsp Green Coriander Powder(Elaichi)

3/4 tsp Garam Masala

1 1/2 tbsp coarsely powdered Cashewnuts

1 1/2 tsp salt

1 tsp Chaat Masala

2 tbsp roasted gram flour(besan)

For the stuffing:

4 tbsp hung curd(Chakka Dahi)

1 green chili – minced

1 tbsp coarsely powdered almonds

1/2 tsp chaat masala

1/4 tsp garam masala

METHOD 

For the casing:

Grind the Capsicum and Spring Onion and the green chilies.

Heat the oil on medium heat and add the Shahi Jeera.When it crackles,add the turmeric powder.Add the ginger-garlic paste and fry for a minute.Add the ground capsicum-green onion paste.

Fry for 2-3 minutes and add the spinach puree.Add the coriander,green cardamom and chaat powders and salt and powdered cashewnuts.

Allow the mixture to cool a little and add the roasted besan.Mix well and allow to cool to room temperature.

For the stuffing:

Mix all the ingredients for the stuffing and refrigerate till making the kababs.

Make 7-8 portions of the hara bhara mixture and similar portions of the stuffing.Now with moist palms.take lime sized balls of the hara bhara mixture.Flatten the ball and place a portion of the stuffing in between.Cover with the hara bhara mix and flatten to form kababs.

Place immediately on a tava(griddle) or a fry pan,pour 1 tbsp oil and shallow fry the kababs by pouring another tbsp oil over them.

Shallow fry on medium heat till cooked,crispy and done on both sides.

Remove to a serving dish and serve hot with onions seasoned with salt and lime juice or green chutney!
