Sattu is a powder of roasted Chana Dal.Its very nutritious and is used in a variety of ways – either by itself or in a secondary way.Here it is used to make Kachori – a fried Indian snack.The recipe is taken from Nisha Madhulika’s blog.
The Sattu Powder before making the Stuffing..
Kachoris are served with Green Coriander Chutney or Spicy Potatoes.But here the Sattu filling has so much taste that you do not require any extra accompaniment for this.I served it with Green Chutney.
Preparation Time – 45 minutes-1 hour
Makes – 8-10 Kachoris
INGREDIENTS
For the Kachori:
2 Cups Wheat Flour
4 tbsp Oil
1 tsp Salt
For the Sattu Stuffing:
Less than 1 cup Sattu Powder
3/4 tbsp Oil
2 pinches Heeng
1/2 tsp Jeera
1 tsp Dhania Powder
1 tsp Saunf Powder
2 green Chilies
1 inch grated Ginger
1/4 tsp Red Chili Powder
1/2 tsp Garam Masala Powder
1/2 tsp Amchur Powder
1 1/2 tsp salt
Oil to fry
1 tbsp Coriander Leaves
METHOD
For the Dough:
Mix flour,Oil and water and knead till the dough is neither too soft and nor to firm.Keep aside to rest for 20-30 minutes.
For the Stuffing:
Heat Oil and add the Cumin Seeds and Heeng.When the Seeds turn a little dark add the Green Chiliesand grated Ginger.Fry for sometime and add the Sattu Flour,Coriander and Fennel Powders.Mix well and cook on the lowest heat possible as the Sattu is pre roasted and tends to burn easily.
Add the other Spice Powders and Salt and mix well.Add Coriander Leaves.Mix again and let it come to room temperature.
The Sattu stuffing..
Make small balls out of the dough and mold into a cup shape.Put a tsp of the filling into each and fold over sealing the sides from one end.
With a rolling pin flatten each ball very slightly to get the shape of a poori.
Heat Oil on medium heat and deep fry each Kachori one at a time till puffed up and crispy.
Serve hot with Chutney.
