Sweet and Sour Preserved Cucumbers

You may call this a Pickle,or a standard Preserve,whatever it is it is lipsmacking!Made in 15 minutes with no labor at all and ready in 24 hours it is the easiest accompaniment to Bread courses of all kinds – Sandwiches,bread and butter,French Toast…the list is endless!But I love this best out of the bottle…its so pungent and sour and sweet and spicy that we cannot just stop at one!

INGREDIENTS

3 Fresh Cucumbers

1/2 cup Vinegar

1 cup Water

2 tsp Salt

2 tbsp Sugar

1/2  tsp Chili Flakes

4 Green Chilies – Stems removed

8-10 peppercorns

METHOD

Heat Water and Vinegar in a saucepan.Add Salt and Sugar and let it come to a boil.Add Chili Flakes and let the liquid cool.

Meanwhile slice the Cucumbers into Roundels and let them dry for 15-20 minutes.

Take a clean Pickle Jar and layer with the Cucumber slices,Green Chilies and Peppercorns at random.Pour the Vinegar solution over and let it cool further.

Close the Jar securely and use it as required.No need to Refrigerate.Serve after a day!
