This soup was posted as an an entry in a competition in the wonderful and popular group Chef at Large organised by Reem Khan and supported and backed up by the dynamic and ever vibrant Sid Khullar – the Founder of Chef at Large!
Consommé is a clear soup which has a lovely rich taste.Here I have used Tomatoes and the soup also has a hint of Tea which makes it even more refreshing and a summer favourite!This recipe is adapted from food critic and author Rashmi Uday Singh’s favourite recipes!
Preparation time: 20-30 minutes
Makes: 3-4 servings
INGREDIENTS
4-5 medium sized Tomatoes – chopped
600 ml water
1/2 tsp tea
1 tsp Salt(According to taste)
2 tsp Sugar(According to taste)
Coriander leaves to garnish
METHOD
Combine Tomatoes and water in a saucepan and cook till tomatoes are soft.Mash inside the saucepan with a potato masher till the tomatoes are mashed and give out their juices.
Now add the tea and lower the heat.Leave to infuse for 7-10 minutes till the flavours of the tea combine with the Tomatoes.
Infusing the Tea…
Strain the contents to extract the clear,infused liquid.Pour it back into the saucepan and add salt,sugar and pepper powder.Stir for 2-3 minutes and take off heat.Leave yo cool a bit.
Ladle into soup bowls.I used shot glasses for a change.Top with a Coriander leaf and serve warm.Serve as a dinner option or as an appetiser.
